Atoms and molecules in these regions have different energies and activity coefficients than those in the bulk phase. The result is that the surfaces or interfaces have a free energy excess, and work is required to change them.
We can understand and characterize these physicochemical properties by measuring their surface and interfacial tension.
Generally speaking, we use the term surface tension when referring to liquid-air interfaces (e.g., foams), and interfacial tension when analyzing liquid-liquid interfaces (e.g., emulsions).
It is important to remember that all surfaces and interfaces are dynamic entities. Therefore, to get a complete picture of how a surface or interface behaves, you need to measure both equilibrium and non-equilibrium states.
